What Is Gluten-Removed Beer?
At Second Street we often use an enzyme which denatures the gluten protein, resulting in a beer that is easier for many people to process and enjoy.
This enzyme is introduced into the fermentation process to chop up gluten proteins and thus alter their nature, so it is important to clarify that we are not using gluten-free inputs, and do not label our beer “gluten-free”. However, the resulting product has a gluten content below 20 parts per million (ppm) which does meet the FDA labeling criteria for gluten-free foods.
Our gluten-removed beer is indistinguishable from a non gluten-removed version in both flavor and mouthfeel, making it enjoyable for everyone, including our customers with gluten sensitivities.
Five of our flagship beers are gluten-removed – 2920 IPA, Boneshaker Amber, Agua Fria Pilsner, Cream Sout and Kolsch. We also offer rotating gluten-removed seasonal beers on tap and in cans.
